    I think I've mentioned that observation here before...a long time ago. Or maybe not. I'm old. Yeah, spices tend to become muted with time in refrigeration, especially the heat of capsaicin.     It actually seemed to mellow after a couple of days. I have a friend who wants to throw beans and some cream cheese in it, but so far I'm resisting... LOL I think if you put cream cheese in it, it would turn out ... pink?

    There was a buck that came by earlier that was nicer. I missed and thankfully did not wound him. When I clicked the release, the arrow did not leave right away (maybe half a second). There was just enough delay to move the bow and miss the deer (not on purpose though). Now the interesting thing is that this happened twice last year on deer. Point, Click and Shi#. At first I blamed the release. Checked it for grass seeds and whatnot. Functioned perfectly. So after the missed buck on Monday, my confidence was gone. I sat there pulling the string back a few inches to try and get the release to fail. It did not. I then got out a spare release from my pack. I made a mental note that whatever was happening I needed to punch it (which I'm not used to doing or want to do). I'd used the release in the summer without incident. Then it dawned on me that all three misses were missed under 10 degrees. I thought maybe the string loop had stiffened up so that it wasn't exiting through the calipers - even though my releases are single caliper releases. The string loop was complimentary and was put on by the bow shop when I changed string. It's not the loop brand I normally use. Has anyone heard of anything like this? I'm still not sure what is happening. I don't think I've developed the yips.

    When we loaded him in the truck it was a balmy 1 degree with wind. He was shot in North Central Nebraska on Veteran's Day. It had just snowed which helped in the trailing. The little brown mark on it's side is the broadhead beneath the skin. So, high entry and no exit meant about a teaspoon of blood for a 100 yards. Luckily it had snowed and I was able to watch where he went into the woods. He expired pretty quickly as I had gotten lung. Nice out-of-focus picture to remember him by. My phone would not work as it was so cold so my friend took these pics. Argg. Decided to take a picture of a spike that was nosing around earlier when my phone was working. Notice it is in focus.

    That's how you know you're doing it right. If it gets to be a bit much just have a glass of milk with it. And guajillos, being one of the lesser-known (but tastier) peppers in Gringoland can be hard to find if you don't have any Hispanic markets.     I did this the other day with 4 lbs. of lean burger. I smoked half with mesquite and browned the other half in bacon fat. I couldn't find the last pepper on the list (was a little short on search time, though). I used tequila, and the peppers were just diced, not pureed. I added the chicken stock a little late when I realized that it was probably supposed to be added when the recipe called for the beef stock. There was also a 45-60 minute interruption in the simmering process when someone had to run to Walmart for Camel Blues, white wine and Irish butter on sale. I was required to ride shotgun. I believe it was between Spice Dumps 1 and 2. All in all, not bad. My hair sweats like a fat kid in gym class with every bowl, but it doesn't last long. I'm gonna give it another try without the distractions and with all the peppers and see what happens.

    I've never had any trouble getting cubed stew meat falling-apart tender with 3 hours of braising. But I'm thinking that the perfect answer to both would be to find yourself a small brisket flat, smoke it like you would any other brisket, chop it up and into the pot with it. Smoked brisket makes a damned fine chili meat.

    I'm leaning towards ground beef vs. stew meat. I can't see getting the stew meat tender enough for pilgrims. Any tips for smoking it? I'm thinking roll it into small balls and lay them on the rack.

    The recipe I linked calls for only 2 lbs of meat (cubed chuck), not 4. And it should result in enough chili for 3-4 servings, or slightly more/less depending on the presence/absencebof a side (cornbread, for instance) and how hungry you are.
